Chinese Vegetable Fried Pasta

My elder son does not like to eat Masala pasta or vegetable pasta, due to their creamy texture. He hates moist foods and prefers or choses only dry foods most of the times.  So while I prepare the masala pasta or cheesy pasta for the rest of us, I have to make something like pasta chat or Chinese Vegetable Fried Pasta or vegetable fried noodles or egg fried noodles that are dry. Along with these dry foods, I serve him a bowl of soup too, like Basil tomato soup or vegetable chicken soup or a corn soup. If you or your kid has a liking towards dry foods, do try this. I have used Maggie chili sauce; you can use any sauce of your choice or a pasta sauce. Today’s recipe is similar to the Chinese Veg Hakka Noodles that I posted earlier

I like to include lots of vegetables in this recipe. You can include your favorite veggies, I have used peas,capsicums, spring onions and carrots. You can use leeks, potatoes, sweet potatoes, palak (indian spinach) or Paneer, tofu, chicken or fish too.

Please Note : you need to use a generous amount of oil or sauce to avoid the pasta looking dry. so adjust to suit your taste.

Serves mum and a kid

1 ½ cup pasta (I used penne, can use any)
2 to 3 garlic pods
2 tbsps of olive or sesame oil
1 tsp vinegar
Very little salt (sauces are salted, so do not add too much)

Sauces (you can use any of these Chinese cooking wine, chili sauce, tomato, peri peri, garlic sauce)
I used
2 to 3 tbsps. sweet chili sauce
2 tsps. Light soya sauce

Vegetables (you can use mushrooms too)
1 large carrot
1/3 cup of spring onions chopped (separate white and greens)
Few tbsps green peas
¼ cup of bell peppers

1.    Mix the sauces with 2 tbsps. Water. set aside

2.    Add pasta to boiling water and cook till al dente (read the instructions on the pack)
3.    Drain and rinse in cold water and set aside to drain
4.    Heat a pan with oil, add garlic and sauté for a min
5.    Add white part of the spring onions. fry for a min or 2
6.    Add all the veggies except green parts of the spring onions. sprinkle salt and fry on medium high heat till all the veggies are cooked

7.    Add green  parts of the spring onion
8.    Add pasta and pour sauces and fry till the pasta warms up. usually takes a min or 2

Sprinkle some grated cheese if you desire
