Indian Mushroom Stir Fry Recipe – Mushroom Potato Roast

Mushroom stir fry

Mushrooms have more moisture in them and have a mild taste too, so I usually pair them with a vegetable especially for stir fry. Today’s Indian mushroom stir fry recipe can be prepared with potatoes or sweet potatoes or soya chunks. I had a guest home sometime back for a meal and he loves hot and spicy foods. So I used the larger variety of green chilies, you can use the regular one too. This dry curry can also be used to make chapathi rolls for kids’ lunch box too (just minus the green chilies)

Serves 3

¾ cup very small cubed potatoes (quick cooking variety)
¾ cup of mushrooms chopped small
2 green chilies
1 sprig curry leaves
Pinch of mustard
Pinch of cumin
Ginger thin slices or strips
Pinch of turmeric
¼ tsp. meat masala or kitchen king masala ( can use simple garm masala but does not taste great)
Salt to taste
¼ tsp. amchur (dry mango powder) or 1 tbsp. lemon juice
2 tbsps oil

1.    Heat a pan with oil, add the green chilies and fry for 2 mins. 
2.    Add onions and fry till the onions turn brown. Set this aside if you desire. Potatoes get fried faster if you set the onions aside.

3.    In the same pan, add the curry leaves, mustard cumin, and ginger. sauté till you get an aroma of ginger

4.    Add potatoes & turmeric, fry till they are almost cooked and soft
5.    Add mushrooms, sprinkle salt and fry till the mushrooms are cooked fully. takes only 3 to 4 mins

6.    Add back the chili onions that were set aside, meat masala & amchur powder. Mix well and fry for 2 to 3 mins. until well mixed

Serve with rice or lemon rice or puliyogare or fried rice. Can be garnished with raw onion and coriander leaves
