Meal Maker fried rice

Meal Maker fried rice can be made using soya chunks or soya granules. If you have someone at home who does not like soya chunks, do try this with soya granules. This time i prepared this with granules and definitely tasted better than the one with chunks. I try to limit the use of sauces for my kids, so this time i made a plain one. I make the one with sauces when iam alone at home for lunch . The plain ones need a side dish, at least a raita or a seasoned curd. This time I prepared this plain meal maker fried rice along with a Mushroom potato gravy . If you wish to make soya chunks fried rice and do not like to use sauces, just follow the recipe of  Paneer Fried Rice

1 cup of long grain rice
¼ to 1/3 cup of soya granules
¼ cup of chopped bell peppers (capsicum, I used red and green)
¼ cup onions cubed and layers separated (you could use spring onions too, separate whites and greens)
Fistful of Green peas
You can use any other veggies like tender cabbage or cauliflower (do not use both) (optional)
 Carrots chopped (optional)
1 tsp. vinegar (if you like you could use ½ tsp. more) (optional)
1 tbsp. ginger or garlic minced (do not use both, use only one)
1/8 tsp. pepper powder
2 to 3 tbsps. Olive oil or sesame oil

Optional ingredients I have tried earlier
1 tsp. Chinese cooking wine or 1 tbsp. ginger wine (nonalcoholic)
1 tbsp. peri peri or chili garlic sauce
1 tbsp. dark soya sauce

1.    Soak soya granules in hot water till they soften. Squeeze up the excess water and rinse them thoroughly with cold water. Squeeze up the excess water and repeat the cold water rinse once more. make sure there is no water left in the granules
2.    Marinate soya granules  with sauces ( If you intend to use) , else just set aside
3.    soak rice for 30 mins and cook so that the rice does not turn mushy, cool it on a wide plate
4.    Heat a wok with oil; add minced ginger or garlic, sauté till you get an aroma. takes a min
5.    Add onions ( or white part of spring onions which ever you are using), sauté quickly on high heat for 2 mins
6.    Add soya granules (marinated or not marinated) fry on high for 2 mins. Simmer the heat cover and cook till the granules are cooked thoroughly. usually takes 3 to 4 mins
7.    Make sure there is not much moisture in the soya. if there is any sauce or moisture left, increase the flame and evaporate
8.    Add the veggies like cabbage or cauliflower, carrots, green peas, capsicum and sprinkle some salt and fry till the capsicums turn slightly soft and yet crunchy
9.    Add vinegar, rice, pepper powder and spring onions (if using). mix and fry on high for 2 to 3 mins

Serve hot with any side dish
