SOUTH INDIAN SWEET

7 CUPS BURFI

Heat half cup ghee in a pan. Set aside.

Add half cup besan to a pan and fry until aromatic

Add half cup coconut and mix well.

Saute for 2 to 3 minutes

Add 1 cup sugar

Add ½ cup milk

Pour ¼ cup melted ghee

Mix well. Regulate the flame to medium and keep stirring non-stop and cook.

Mixture begins to bubble

Add half tsp cardamom powder

When the mixture becomes thick, add ¼ cup hot ghee

Cook stirring until the mixture begins to leave the sides of the pan

The mixture thickens and you can see lot of pores (bubbles) in the mixture. The mixture completely leaves the sides

Quickly pour the mixture to a greased tray. Level it & draw lines immediately. Cut when it cools down.

Store 7 cup burfi in a air tight jar
