Cube the bread and keep aside. Chop onions and tomatoes finely. Reserve some onions to garnish.
Heat oil in a pan. Add cumin seeds and let sizzle for 30 seconds. Add the onions and chilies. Saute till they turn golden.
Add ginger garlic paste and saute until the raw smell is gone, for a minute. Stir in the tomatoes, salt, garam masala, pav bhaji masala and chili powder.
Saute until the tomatoes break down and the masala turns aromatic. Pour 3 tbsp of water and cook till the masala begins to bubble & turns thick. Crush kasuri methi in your palm and add it
Taste test and adjust salt or spices to your taste. Stir in the bread and coat gently with the masala. Garnish with coriander leaves, sprinkle chaat masala and reserved onions.
